Human beings love lists and classifications. We who work in wine know this all too well, with the annual BEST 100 lists (they might be called in different ways, but the jist is the same) being a source of fun and never-ending diatribes between both friends and foes. People love to classify everything, from movies to songs to art works to universities…and so on and on and on. Restaurants cannot avoid a similar fate, and in fact, the Michelin star-rating system is one of the best-known scoring systems of all.
