Bombana is a name well-known to Italian sybarites, given that chef Umberto Bombana, originally of Bergamo, is at the helm of the Opera Bombana in Hong Hiong, what may well be the best, or at no worst one of the three best, Italian restaurants in the world outside of Italy. There are two Bombana restaurants in mainland China as well, but unfortunately neither one, though perfectly fine dining destinations, have ever come close to the original’s level of quality. That sad state of affairs began to change for the better (much better) at the Shanghai restaurant just a few years ago, with the arrival of a brand new kitchen and dining room team that has breathed new life into the restaurant. Admittedly, a slight tweaking of prices has also helped, given that Bombana in Shanghai was for a while one of the city’s most prohibitively expensive restaurants. Today, the food, wines, service and prices make Bombana in Shanghai one of the world’s truly can’t miss Italian dining experiences.
