Wooooooow: what an explosion for the senses. That is, in one short phrase, the best description possible for Nebula, a new restaurant that opened only a few months ago (this past February, in fact), in Shanghai, China. An explosion of talent, of beauty, of good taste: Nebula is one of the best new restaurants I have tried in the last ten years or so; and that’s saying quite something, because the number of new openings that were truly worth remembering over these past ten years, and I don’t mean just in Shanghai, does not reach that of the fingers of both hands. That tells you just how hard it is to get a fine dining restaurant down right: many try, very few succeed. At Nebula, the talent of the chef is crystalline, the design sleek and ultra-elegant, the service friendly and professional, the wine list excellent. It all comes together in one exciting whole that, even better, is more than just the sum of its very high-level parts.
