Armando al Pantheon is one of Rome’s most iconic trattorie, and really head and shoulders above almost all of them in terms of the quality in your plate. The Gargioli family has been running it since 1961, with Armando appropriately enough starting off the culinary fireworks, followed by his son Claudio and now it’s Fabiana, the third generation of the family who is also a super-knowledgeable sommelier, who runs the show. And she runs it well.
