Veal sweetbreads with mushrooms and asparagus (Fricassée de ris de veau aux champignons)

The Taverne Alsacienne has been run very capably by the Guggenbuhl family for years, with legions of sybarites and fans that happily make their way to Ingersheim, close by Colmar, to enjoy the restaurant’s pleasant, very refined décor, hearty flavourful food and above average wine list. Factor in that prices are reasonable prix-fixes menus run mostly from 25-50 Euros with only one reaching 65 Euros (“Inspiration” menu). But should you decide to go à la carte, your bill won’t force you to consider mortgaging the house: appetizers are 18-21 Euros (unless you want the Pantagruelic version of foie gras, served with a seasonal chutney: if so, that will cost you 28 Euros); mains run 28-36 Euros and desserts (excellent) are all 12 Euros.
