by Ian D’Agata

Assiette Champenoise

40 Av. Paul Vaillant-Couturier

51430 Tinqueux

France

Tel. +33 326846464

The dishes

Petrossian caviar / Smoked haddock / Potato B. Deloffre

Langoustine Royale / roasted with olive oil from Vale Douro / Shell emulsion

Brittany Blue Lobster / In Homage To My Father / Juice Of The Heads

Farmer Veal Sweet Bread / Artichoke B. Deloffre / Roasted Veal Juice, Barolo Vinegar
